Cottage cheese: I love the 4% Friendship brand, but you can use whatever you prefer.
Grilled chicken: You can use my grilled chicken recipe if needed.
Whole wheat bread: Toasted.
Roasted red pepper spread: Here’s an easy recipe for you to use.
Mozzarella cheese: Or whatever cheese you prefer. (I love provolone on this sometimes.)
Lettuce and tomato: Because what’s a sandwich without them?
Honestly layer however you’d like, but I tend to toast my bread, then spread the roasted red pepper spread on the bottom, followed by lettuce, chicken, cheese, tomatoes, more lettuce, and then spread the cream cheese on the top slice. Ta-da!
