This easy coconut rice recipe is perfect to serve with a variety of dishes, but works amazingly well with Caribbean and Indian meals.
You only need a few simple ingredients to make this flavorful rice:
Basmati Rice: Can also use Jasmine rice.
Coconut milk: I use reduced fat for this recipe, but you can also use full fat.
Water: To cook the rice.
Salt: For flavor.
This recipe is so easy and will be ready in under 30 minutes.
The first thing you’re going to do is rinse your rice a few times (or until the water runs clear).
Now, add the rice to a pot along with the coconut milk, water, and salt. Bring it to a boil, then cover and reduce the heat to low. Let it cook for 20 minutes, then uncover, take off of the heat and let it sit for 5 minutes before fluffing.
