    Sausage, Peppers, and Potatoes

    This classic Italian comfort food is simple, hearty, and will quickly make your weekly rotation.

    You can eat this straight out of the oven as a meal, or you can pile it inside of some warm Italian bread for a delicious sandwich.

    What Goes In This Sausage, Peppers and Potatoes Bake?

    The ingredients are simple, but work together beautifully.

    Italian sausages: You can use all sweet, all hot or a mixture of both!

    Bell Peppers: I use a couple of different colors because I like how it looks.

    Onions: I use yellow onions, but you really can get away with any.

    Red potatoes: Cut into chunks.

    Chicken stock: To make sure it doesn’t dry out while baking.

    Spices: I use Italian seasoning, dried basil, dried oregano, red pepper flakes, and salt and pepper.

    How to Make Sausage, Peppers, and Potatoes

    Step 1: Parboil your potatoes.

    Preheat the oven to 420 degrees F.

    The first thing you’ll do is cut the potatoes into chunks, and then parboil them in salted water. (Bring to a boil, then reduce to a simmer and let cook until tender.)

    While these are cooking, prep your other ingredients by cutting the sausages in half and slicing the onions and peppers and setting aside.

    Once the potatoes are done, drain them and add them to a big baking dish.

    Step 2: Brown your sausages.

    In a cast iron skillet, add a touch of oil and brown the sausages (in batch if necessary) on all sides, removing with a slotted spoon and adding directing to the baking dish with the potatoes. When done, pour off a bit of the fatty oil, leaving about a tbs left.

    Step 3: Cook the peppers and onions.

    Now add the peppers and onions (in 2 batches if necessary) with a pinch of salt and pepper. Cook until slightly softened and charred in some spots, about 5 minutes. Add to the baking dish with the potatoes and sausages.

    Step 4: Season and bake.

    Now, mix everything in the baking dish and then add the spices and chicken stock, stirring to make sure everything is evenly coated.

    Bake in the preheated oven for ~45–60 minutes, or until the potatoes are cooked through and the sausage is cooked to your liking.

    Ingredients

    • 2 lbs Italian sausages cut in half
    • 5 red potatoes cut into chunks
    • 2 bell peppers sliced
    • 2 yellow onions sliced
    • 1 cup chicken stock
    • 1 tbs Italian seasoning
    • 1 tbs dried oregano
    • 1 tbs dried basil
    • Pinch red pepper flakes
    • Salt & pepper

    Instructions

    • Preheat the oven to 420 degrees F.
    • Parboil the potatoes by adding the cut potatoes to cold, salted water and bringing to a boil. Lower the heat a bit and let cook until tender. Drain and add potatoes to a big baking dish.
    • Add a touch of oil to a cast iron skillet and brown the sausages on all sides. Add to the baking dish with the potatoes when done. (Can brown in batches if needed.)
    • Pour off most of the fatty oil, then add the onions and peppers (in batches) with a pinch of salt and pepper. Cook until slightly softened and charred in spots. Remove and add to the baking dish.
    • Stir everything together, then add the chicken stock, dried herbs and spices. Stir and then bake in the preheated oven for ~45–60 minutes or until the potatoes are cooked through and the sausage is cooked to your liking.
