Sausage, Peppers and Potatoes

- 2 lbs Italian sausages cut in half
- 5 red potatoes cut into chunks
- 2 bell peppers sliced
- 2 yellow onions sliced
- 1 cup chicken stock
- 1 tbs Italian seasoning
- 1 tbs dried oregano
- 1 tbs dried basil
- Pinch red pepper flakes
- Salt & pepper
Preheat the oven to 420 degrees F.
Parboil the potatoes by adding the cut potatoes to cold, salted water and bringing to a boil. Lower the heat a bit and let cook until tender. Drain and add potatoes to a big baking dish.
Add a touch of oil to a cast iron skillet and brown the sausages on all sides. Add to the baking dish with the potatoes when done. (Can brown in batches if needed.)
Pour off most of the fatty oil, then add the onions and peppers (in batches) with a pinch of salt and pepper. Cook until slightly softened and charred in spots. Remove and add to the baking dish.
Stir everything together, then add the chicken stock, dried herbs and spices. Stir and then bake in the preheated oven for ~45–60 minutes or until the potatoes are cooked through and the sausage is cooked to your liking.
