Pumpkin Spice Martini Ingredients
Here’s what you need for this perfect Pumpkin Martini:
Pumpkin: I used Libby’s Pumpkin Pie Mix, baked halfway and cooled. (Science.)
Pumpkin spice simple syrup: You can use store bought or make your own.
Vanilla vodka: The vanilla adds the perfect sweetness to this cocktail.
Goldschlager: For that cinnamon spice.
Bailey’s: To make it creamy and dreamlike.
How to Make Pumpkin Martinis
Here’s how to make your new favorite fall cocktail:
Step 1: Prep your ingredients.
The first thing you’ll want to do is prep your pumpkin and pumpkin spice syrup (is making it yourself).
Start by preheating your oven to 425 degrees F. Dump the Libby’s Pumpkin Pie Mix into a baking dish and bake for 30 minutes (don’t go any further as you don’t want to make a pie!). It’ll look like this:
While that’s baking, make the Pumpkin Spice Syrup by combining ½ cup water, ½ cup granulated sugar, and ½ teaspoon pumpkin pie spice over medium heat. Bring to a boil, then lower to a dancing simmer.
Let cook for 10 minutes, stirring occasionally, or until the sugar is completely dissolved. Let cool.
Step 3: Rim your martini glass.
You can choose whatever you like here, but combine a little bit of brown sugar and cinnamon for the rim. On the other plate I use some of the pumpkin spice syrup so that the brown sugar cinnamon sticks to the rim.
Step 4: Make the martini.
In a cocktail shaker add some ice, followed by a heaping tablespoon of pumpkin. Then add 1-2 teaspoon of the syrup (depending on how sweet you want it). Add one jigger of Vanilla Vodka, one jigger of Goldschlager, and two jiggers of Baileys. Shake and pour into your martini glass. Top with a bit of cinnamon and enjoy!
Spiced Pumpkin Martini

- 1-2 teaspoon pumpkin spice syrup (ingredients below)
- 2 jiggers Bailey's Irish Cream
- 1 jigger Vanilla Vodka
- 1 jigger Goldschlager
For the Pumpkin Pie Syrup
- ½ cup water
- ½ cup granulated sugar
- ½ teaspoon pumpkin pie spice
For the Rim
- 2 tbs brown sugar
- Pinch cinnamon
Instructions
- Preheat the oven to 425 degrees F. Bake the pumpkin pie mix for 30 minutes, then remove, stir, and let cool. In the meantime, make the pumpkin syrup by combining ½ cup water, ½ cup granulated sugar, and ½ teaspoon pumpkin pie spice in a pot over medium heat. Bring to a boil, then lower to a dancing simmer and let cook, stirring occasionally, for 10 minutes, or until the sugar is completely dissolved. Let cool.
- Add a little bit of the syrup to one plate and 2 tbs of brown sugar with a pinch of cinnamon to another plate. Turning the martini glass upside down, spin it in the syrup to cover the rim, then directly add it to the brown sugar mixture and spin until it's rimmed.
- To a cocktail shaker add ice followed by a heaping tablespoon of the pumpkin, pumpkin syrup, vodka, Goldschlager, and Baileys. Shake and pour into a martini glass.
