Spiced Pumpkin Martini

Inspired by a Pumpkin Martini I had in Salem, Massachusetts, this spiced cocktail is perfect for your fall dinner parties.

Ingredients

  • 1 can Libby's Pumpkin Pie Spice
  • 1-2 teaspoon pumpkin spice syrup (ingredients below)
  • 2 jiggers Bailey's Irish Cream
  • 1 jigger Vanilla Vodka
  • 1 jigger Goldschlager

For the Pumpkin Pie Syrup

  • ½ cup water
  • ½ cup granulated sugar
  • ½ teaspoon pumpkin pie spice

For the Rim

  • 2 tbs brown sugar
  • Pinch cinnamon

Instructions

  • Preheat the oven to 425 degrees F. Bake the pumpkin pie mix for 30 minutes, then remove, stir, and let cool. In the meantime, make the pumpkin syrup by combining ½ cup water, ½ cup granulated sugar, and ½ teaspoon pumpkin pie spice in a pot over medium heat. Bring to a boil, then lower to a dancing simmer and let cook, stirring occasionally, for 10 minutes, or until the sugar is completely dissolved. Let cool.
  • Add a little bit of the syrup to one plate and 2 tbs of brown sugar with a pinch of cinnamon to another plate. Turning the martini glass upside down, spin it in the syrup to cover the rim, then directly add it to the brown sugar mixture and spin until it's rimmed.
  • To a cocktail shaker add ice followed by a heaping tablespoon of the pumpkin, pumpkin syrup, vodka, Goldschlager, and Baileys. Shake and pour into a martini glass.
