Creamy Cucumber and Tomato Tahini Salad

Whether you have leftover Honey Tahini Sauce or you’re just looking to have a refreshing side salad that tastes like it came straight from a seaside Mediterranean restaurant, this Creamy Cucumber and Tomato Tahini Salad is perfect to serve alongside some Chicken Shawarma, as a topping for sandwiches or just to pick at throughout the day.

It’s soooo creamy and so delicious, I promise you’ll love it!

Cucumber and Tomato Tahini Salad Ingredients

You won’t need a ton for this simple and delicious salad, but you will need some fresh ingredients to make it really sing.

Honey Tahini Sauce: You can get the recipe for this perfect tahini dressing over here.

Persian cucumbers: I use two Persian cucumbers (the smaller ones) for this, but you can also use one large one if that’s what you have.

Roma tomatoes: You can sub any tomato you have sitting around.

Salt: To make everything pop.

Red pepper flakes: For a little kick.

Fresh herbs: I used parsley, dill and a touch of mint.

How to Make Cucumber and Tomato Tahini Salad

This is literally so simple to throw together!

Step 1: Prep everything.

As always, start by prepping everything. For this recipe, that means chopping everything up. I do small chunks for my cucumbers and tomatoes, but you can make these any size your heart desires. I’ll then coarsely chop my parsley and dill, and finely chop my mint.

Step 2: Mix everything!

Now just combine the cucumbers, tomatoes, fresh herbs, honey tahini sauce, salt and red pepper flakes. Stir until incorporated and enjoy!

  • ½ cup Honey Tahini Sauce
  • 2 persian cucumbers chopped
  • 2 roma tomatoes chopped
  • ¼ cup fresh parsley chopped
  • 1–2 dill sprig chopped
  • 3 mint leaves finely chopped
  • ½ teaspoon kosher salt or more (to taste)
  • Pinch red pepper flakes
