Tostones (Tostones de Platanos)

These fried green plantains are so delicious and addictive. They're double fried and perfect for added to any Spanish or Caribbean meal.

Equipment

  • 1 mason jar

Ingredients

  • 1 green plantain peeled and sliced into 1 inch circles
  • ½ cup neutral oil or more, if needed to reach 1-2 inches in a frying pan
  • 1 cup water
  • 1-2 teaspoon kosher salt

Instructions

  • Heat the oil until hot. Add the plantains and fry for about 2-3 minutes per side or until golden. Remove and let drain on a paper towel-lined plate. Keep the oil hot.
  • Take each plantain and put on a cutting board. Using the bottom of a mason jar, smash the plantain until it flattens. Add back to the plate. Repeat with all the plantains.
  • Make the salt bath. Dip each flattened plantain into the salt bath and CAREFULLY add it to the oil. The oils will splatter, so I liked to gently slide the plantain in from the side and step back. Fry until golden (just about 1-2 minutes). Remove, let drain and sprinkle more salt!
