Ingredients

  • 5-6 tomatillos
  • 3-4 garlic cloves peels on
  • 1-2 serrano peppers sub: jalapeño
  • ½ large white onion cut into large chunks
  • ¼ cup fresh cilantro more to taste
  • 2 teaspoon kosher salt more to taste
  • 1 lime juiced

Instructions

  • Preheat broiler on high and set a rack 4 inches below the flame. Add the tomatillos, onion, garlic, and serranos to a lined baking sheet. Drizzle with olive oil and make sure all the veggies are covered.
  • Broil for 5 minutes, then flip and broil another 5-6 minutes or until charred, checking to make sure nothing burns (specifically watch the garlic and remove if needed!). Remove and let cool for a few minutes.
  • Remove the peels from the garlic and cut off the woody ends. With gloves, cut the serranos lengthwise and remove the seeds and stems,
  • Add the tomatillos, onions, garlic, serrano (I start with 1 pepper, blend, then taste and add more if needed. Start smaller here!), cilantro, lime juice, and kosher salt to a blender. Blend on high until smooth, scraping down the sides occasionally.
