Salsa Verde
Salsa verde is a popular Mexican green salsa made with tomatillos, serrano peppers, white onion, garlic, cilantro, salt, and lime juice.

- 5-6 tomatillos
- 3-4 garlic cloves peels on
- 1-2 serrano peppers sub: jalapeño
- ½ large white onion cut into large chunks
- ¼ cup fresh cilantro more to taste
- 2 teaspoon kosher salt more to taste
- 1 lime juiced
Preheat broiler on high and set a rack 4 inches below the flame. Add the tomatillos, onion, garlic, and serranos to a lined baking sheet. Drizzle with olive oil and make sure all the veggies are covered.
Broil for 5 minutes, then flip and broil another 5-6 minutes or until charred, checking to make sure nothing burns (specifically watch the garlic and remove if needed!). Remove and let cool for a few minutes.
Remove the peels from the garlic and cut off the woody ends. With gloves, cut the serranos lengthwise and remove the seeds and stems,
Add the tomatillos, onions, garlic, serrano (I start with 1 pepper, blend, then taste and add more if needed. Start smaller here!), cilantro, lime juice, and kosher salt to a blender. Blend on high until smooth, scraping down the sides occasionally.
