Pizza Fritta (Fried Pizza)

A street food staple in Naples, Pizza Fritta (aka fried pizza) is pizza dough fried until golden and topped with sauce and grated cheese.

Ingredients

  • 1 pizza dough cut into 4 and rolled into ovals
  • 1 cup pizza sauce
  • Locatelli grated
  • fresh basil
  • ½ cup neutral oil plus 1 tbs olive oil

Instructions

  • Add the oils to a large skillet over high heat. Once hot, lower just a tad.
  • Add the dough ~2 at a time (depending on how large your skillet is). Fry until bubbles begin to form and the underside is golden (about 2 mins). Flip and fry until the other side is golden (another 1–2 mins). Remove to a paper towel-lined plate.
  • Top each fried dough with some sauce and a generous sprinkling of Locatelli. Add one basil leaf and enjoy hot!
