Picadillo Con Papas

- 1 lb ground beef
- ½ yellow onion diced
- ½ bell pepper chopped (I use a mixture of colors)
- 2 garlic cloves minced
- 2 bay leaves
- 1.5 cups beef broth
- 2 tbs tomato paste
- 1 tbs paprika
- ½ tbs adobo
- 1 teaspoon oregano
- ½ teaspoon cumin
- ½ teaspoon coriander
- ½ teaspoon black pepper
- ½ teaspoon kosher salt
- 1 potato peeled and diced
- 1 splash red wine vinegar
Add the spices, onions, garlic, peppers, and red wine vinegar to the ground beef and mix together. Let sit for about 20 minutes.
Over medium high heat, add a touch of olive oil to a skillet with high sides. Dump in the beef mixture and let cook for about 7 minutes. Drain out the excess fat and return to the heat.
Add the beef broth, potatoes, tomato paste, and bay leaves. Bring to a boil, then reduce to a simmer, cover, and let cook for 15 minutes. Uncover and let cook for an additional 15 minutes, or until most of the liquid is soaked up.
