    This super easy (and delicious!) roasted garlic & chipotle mayo is perfect for topping tacos, sandwiches, tostadas — or anything else your heart desires.

    With just a few simple ingredients, a food processor, and your oven, you’ll have a restaurant-worthy sauce that will wow your guests.

    Chipotle mayo is a versatile condiment that pairs well with burgers, sandwiches, wraps, tacos, grilled chicken, fish, and even as a dipping sauce for fries or sweet potato wedges.

    How Spicy is Chipotle Mayo?

    As with all of my recipes, this is just a blueprint. You can adjust the spice level as you see fit. I recommend tasting as you go to make sure the spiciness is where you want it to be.

    If it’s your first time using chipotle peppers, I recommend starting with one pepper and adjusting per your household. If you want a tad more spice but not too much, you can add some sauce from the chipotle can instead of using the whole second pepper and so on.

    How to Make Roasted Garlic

    Making your own roasted garlic is as easy as tossing some skin-on garlic cloves in some olive oil, wrapping them in aluminum foil and roasting them in a 400 degree F oven for 15 minutes.

    Here’s what you’ll need for this delicious sauce:

    Mayo: Because we’re making a mayo 😉

    Chipotle pepper in adobo sauce: You can find these in the international or hispanic section of your supermarket.

    Roasted garlic cloves: To give that perfect flavor to the aioli.

    Smoked paprika: To give a slight smokiness.

    Chili powder: For additional spice and flavor.

    Salt: To pull all of the flavors together.

    Neutral oil: To help blend the sauce.

    Ingredients

    • ½ cup mayo
    • 1 chipotle in adobo pepper More if desired
    • 3 garlic cloves roasted
    • 1.5 teaspoon smoked paprika
    • 1 teaspoon chili powder
    • ½ lime juiced
    • 1–2 pinches salt
    • 1 tbs neutral oil
    • water as needed

    Instructions

    • Preheat the oven to 400 degrees F. Cover garlic cloves (peels on) in olive oil, wrap in aluminum foil and roast for 15 minutes. Let cool enough to handle, then remove peels and cut off ends.
    • Add everything to a food processor. Taste and adjust accordingly. Adjust water to your desired consistency, starting with 1 tbs. (I like mine a little runny when looking to drizzle on tacos, and thicker if it's for a burger or sandwich).
