    Pumpkin S’mores Bars

    A graham cracker & pumpkin chocolate chip cookie dough is topped with marshmallow fluff, crushed up graham crackers, and more chocolate for a s’mores and fall-inspired bar. It’s like a brookie, but also not? I’m obsessed.

    Pumpkin S’mores Bars Ingredients

    Pumpkin puree: Patted with a paper towel to remove excess moisture

    Marshmallow Fluff: You could also use jumbo marshmallows if you have them on hand. Just cut them in half and lay the cut-side down during the same step where you’d add the fluff.

    Chocolate chips: Dark chocolate. Can sub for chocolate chunks or chopped chocolate.

    Graham crackers: You’ll be crushing these up for both the dough and the topping.

    Butter: Unsalted, melted

    Pumpkin pie spice: To add just a touch of pumpkin-y goodness to the dough

    Baking powder & baking soda: For a rise

    Flour: I use King Arthur AP flour

    Salt: For balance. I use Morton’s Kosher Salt.

    Brown sugar & white sugar: For sweetness.

    Large egg: Just one

    Vanilla extract: Just a touch

    How to Make Pumpkin S’mores Bars

    Step 1: Remove excess moisture from the pumpkin

    Take the pumpkin and spread it out on a plate. Use a folded paper towel to pat it, removing some excess moisture. Repeat this about 3 times.

    Step 2: Combine the wet ingredients

    In a bowl, whisk together the melted butter, brown sugar, and white sugar. Then, add the pumpkin, egg, and vanilla. Whisk until combined.

    Step 3: Add the dry ingredients

    Add the flour, baking powder, baking soda, pumpkin spice, and salt. Whisk until it becomes a smooth dough. You can switch to a spatula towards the end.

    Step 4: Add the chocolate and graham crackers

    Add ½ cup of chocolate and ~4 crushed up graham crackers and fold to combine.

    Step 5: Add everything to the baking dish

    To an 8×8 baking dish lined with parchment paper, add about ⅔ of the cookie dough and spread it evenly.

    Step 6: Add the fluff

    Add the fluff to the cookie dough. Use a spoon to spread it evenly over the dough.

    Step 7: Add the rest of the cookie dough, graham crackers, and chocolate

    Take spoonfuls of the remaining cookie dough and dot it all over the fluff, taking care to spread it out a bit. Then, add ~2 crushed graham crackers over the top. Have a few bigger pieces too. Finally, sprinkle about ¼ cup of chocolate (or more, as desired) over everything.

    Step 8: Bake it!

    Bake in a preheated 350-degree Fahrenheit oven for about 30-35 minutes, or until the center is mostly set. Let cool for ~10-15 minutes before cutting.

    Equipment

    • 1 8×8 baking dish

    Ingredients

    • ½ cup unsalted butter melted
    • ½ cup brown sugar
    • ⅓ cup granulated sugar
    • ⅓ cup pumpkin puree, excess moisture removed plus 1 tbs
    • 1 teaspoon vanilla extract
    • 1 large egg
    • 1 ¼ cup AP flour
    • ½ teaspoon kosher salt
    • ½ tsp pumpkin pie spice
    • ¼ teaspoon baking soda
    • ¼ teaspoon baking powder
    • 6-8 square graham crackers
    • ½-1 cup dark chocolate chips or chopped chocolate, or chocolate chunks
    • 1 cup marshmallow fluff or jumbo marshmallows, cut in half

    Instructions

    • Preheat oven to 350 degrees Fahrenheit and add parchment paper to an 8×8 baking pan.
    • Spread the ⅓ cup and 1 tbs of pumpkin on a plate. Fold a paper towel and pat it dry. Repeat about 3 times and set aside.
    • Add the butter and sugar to a bowl. Whisk until combined, then add the pumpkin, vanilla, and egg. Whisk to combine.
    • Add the flour, pumpkin spice, salt, baking powder, and baking soda to the wet ingredients. Whisk until combined. Switch to a spatula towards the end.
    • Add about ½ cup of chocolate (or more if desired) and ~4 graham cracker squares, crushed up. Fold into the batter.
    • Add about ⅔ of the cookie dough into the baking dish. Spread evenly. Add the fluff (or if using marshmallows, cut them in half and add them cut side down until all of the dough is covered).
    • Use a spoon (or cookie dough scoop) to add the remainder of the cookie dough dotted over the marshmallows/fluff. Spread them out a bit, and then add ~2 crushed up graham cracker squares (keep some bigger pieces for the vibes). Add about ¼ cup to ½ cup of chocolate chips/chopped chocolate to the top.
    • Bake in the preheated oven for ~30-35 minutes, or until the center is mostly set. Let cool for about 10-15 minutes before cutting.
