What’s more tasty than a cobbler made with one fruit? A cobbler made with TWO! This is my Peach & Strawberry Cobbler, and while this may not be your first fruity duo, I promise that it’s the perfect summer dessert to grace your dinner table. This cobbler has soft peaches and jammy strawberries and is topped with a crispy crumble that really pulls everything together.
Cobblers tend to fall into two types: batter style or biscuit style. Batter style is when you use a cake-like batter that you pour into the pan before adding the fruit (this is how my Old Fashioned Peach Cobbler is). Batter style produces a fluffy, cake-like result. Biscuit-style, on the other had, uses a thicker batter more similar to a cookie dough that is “dropped” into the top of the fruit. This style creates a crispy topping that is similar to a classic crisp (like Apple Crisp), although it is a bit fluffier since there are no oats involved.
This particular cobbler you’ll be making today is a biscuit-style. And I’m fucking obsessed with it.
Fresh peaches: Peeled and sliced (If you’d like you use canned, go right ahead! Just make sure to drain them before using).
Fresh strawberries: Cut into quarters
Granulated sugar: For the filling
Cornstarch: To help thicken the filling while it bakes
Vanilla extract: For both the filling and the topping
Cinnamon: Adds a little warmth to both the filling and topping
Unsalted butter: Melted
AP Flour: I use King Arthur
Light brown sugar: For the topping
Baking powder: For the topping
Kosher salt: Just a pinch
Let’s get started!
Add everything for the topping to a clean bowl and mix until combined. It will resemble a cookie dough batter. This is exactly what you want! Set aside.
Spray some non-stick spray onto your baking dish and then add the fruit.
To make our life easier, we’re going to be mixing up the fruit right in the pan. Add the cornstarch, sugar, vanilla, and cinnamon and mix until combined.
Now take spoonfuls of the topping and dollop them all over the fruit. It will expand when it makes, so don’t be stressed about having to cover every inch of the fruit. This is a rustic recipe!
Bake the cobbler in a 350-degree F oven for about 40 minutes, or until the top of golden. Keep in mind that the topping will be a little puffy at this time — this is normal! It will crisp up a bit as the cobbler cools. Enjoy!
