    This easy coconut rice recipe is perfect to serve with a variety of dishes, but works amazingly well with Caribbean and Indian meals.

    Coconut Rice Ingredients

    You only need a few simple ingredients to make this flavorful rice:

    Basmati Rice: Can also use Jasmine rice.

    Coconut milk: I use reduced fat for this recipe, but you can also use full fat.

    Water: To cook the rice.

    Salt: For flavor.

    How to Make Coconut Rice

    This recipe is so easy and will be ready in under 30 minutes.

    Step 1: Rinse your rice.

    The first thing you’re going to do is rinse your rice a few times (or until the water runs clear).

    Step 2: Cook the coconut rice.

    Now, add the rice to a pot along with the coconut milk, water, and salt. Bring it to a boil, then cover and reduce the heat to low. Let it cook for 20 minutes, then uncover, take off of the heat and let it sit for 5 minutes before fluffing.

    Ingredients

    • 2 cups basmati rice rinsed
    • 1 can coconut milk
    • 1 ¼ cups water
    • 2 teaspoon kosher salt

    Instructions

    • Add the rinsed rice, coconut milk, water and salt to a pot.
    • Bring to a boil, then reduce heat to low, cover and let cook for 20 minutes. Then uncover, remove from heat and let sit 5 minutes before fluffing.
