I wanted this apple bread to taste like more than just cinnamon swirl bread with a few pieces of apple thrown in. So I decided to make an apple pie filling that took the entire thing to a new level. The result is a soft, cozy loaf that tastes somewhere between apple bread and a slice of homemade apple pie.

Apple Pie Bread Ingredients

All Purpose Flour: I use King Arthur All Purpose Flour
Unsalted butter: At room temperature
Sugar: Granulated sugar for the batter and brown sugar for the apple pie filling
Eggs: Room temperature
Milk: To add moisture to the batter
Vanilla extract: For the batter and apple mixture
Apple pie spice: Can use pumpkin pie spice instead
Lemon juice: To add a bit of balance to the apple pie filling
Baking powder: For the batter
Salt
Cinnamon: For the glaze
Powdered sugar: For the glaze
How to Make Apple Pie Bread
Step 1: Make the apple pie filling

Combine the apples with the brown sugar, lemon juice, apple pie spice, vanilla, and salt. Bring to a boil, then lower to a simmer and let cook until the apples have softened (about 10 minutes). Then remove the apples and let the liquid reduce until it coats the back of a spoon (another few minutes, but watch it!).
Once the liquid has reduced, pour it back over the apples and mix.

Step 2: Make the batter
Add the butter and granulated sugar to a standing mixture fitted with the paddle attachment. Start on low, then increase to medium-high. Let mix until combined and fluffy, about 3 minutes. Then, add the eggs and vanilla and mix until combined.

Mix the dry ingredients in a separate bowl and then add it to the wet ingredients. Mix on low, and then increase to medium. While mixing, slowly pour in the milk. Mix until just combined, and then stop and finish mixing it with a rubber spatula.

Step 3: Add the apple pie filling
Add about ⅔ of the apple pie filling to the batter.

Fold it in until just combined.

Step 4: Add the batter to a bread pan

Line a bread pan with parchment, then add the batter. Add the rest of the apple pie filling on top, and then sprinkle with about 2 tablespoons of brown sugar (can do more if you prefer!). Then sprinkle a couple of teaspoons of kosher salt.
Bake in a 350 degree F oven for about 50-55 minutes, or until the middle is set. Let sit in the pan until cooled.
Step 5: Make the glaze

Combine the ingredients for the glaze and then drizzle over the bread.
Apple Pie Bread
Ingredients
- 1.5 cups all purpose flour King Arthur
- 1.5 teaspoon baking powder
- 1 teaspoon apple pie spice or pumpkin pie spice
- ½ teaspoon kosher salt
- 1 stick unsalted butter room temp
- ½ cup granulated sugar
- 2 teaspoon vanilla extract
- 2 large eggs room temp
- ½ cup milk
Apple pie filling
- 3 large apples peeled and cut into small cubes
- ¾ cup brown sugar
- ½ teaspoon fresh lemon juice
- 1 & ¾ teaspoon apple pie spice or pumpkin pie spice
- ½ teaspoon vanilla extract
- Pinch kosher salt
Glaze
- ¾ cup powdered sugar
- 2 tbs milk
- Pinch apple pie spice or pumpkin pie spice
Instructions

- Preheat the oven to 350 degrees F and line a bread pan with parchment paper. Set aside.
- Add the butter and salt to a stand mixer fitted with the paddle attachment. Start on low, then increase to medium-high and let mix for about 3 minutes or until fluffy. Add the eggs and vanilla and mix until combined.
- Combine the flour, baking powder, apple pie spice, and salt in a bowl. Pour into the wet ingredients. Start on low and increase to medium. Slowly add the milk and mix until just combined. Finish mixing with a rubber spatula.
- Add ⅔ of the apple pie filling to the batter and fold in. Pour the batter into the bread pan. Add the rest of the apple on top, then sprinkle brown sugar and a little salt on the top.
- Bake in the preheated oven for 50-55 minutes, or until the center is set. Let sit in the pan until mainly cooled, then remove.
- Make the glaze, and drizzle over the bread.
