Roasted Garlic & Chipotle Mayo

This smokey, spicy chipotle mayo is perfect for using on tacos, tostadas and sandwiches. It has roasted garlic to give it deeper flavor.

Ingredients

  • ½ cup mayo
  • 1 chipotle in adobo pepper More if desired
  • 3 garlic cloves roasted
  • 1.5 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ lime juiced
  • 1–2 pinches salt
  • 1 tbs neutral oil
  • water as needed

Instructions

  • Preheat the oven to 400 degrees F. Cover garlic cloves (peels on) in olive oil, wrap in aluminum foil and roast for 15 minutes. Let cool enough to handle, then remove peels and cut off ends.
  • Add everything to a food processor. Taste and adjust accordingly. Adjust water to your desired consistency, starting with 1 tbs. (I like mine a little runny when looking to drizzle on tacos, and thicker if it's for a burger or sandwich).
